Organic produce on the menu at Bite Copenhagen

Have a peek under the hood when Organic Denmark and collaborators showcase the practical conversion of organic produce in the professional kitchen.

200 m2 dedicated to organic innovation. 

When Bite Copenhagen takes place for the first time on the 24th-25th of August 2017, in Forum Copenhagen, Organic Denmark and the Copenhagen Hospitality College  will be present, and together promote organic produce in professional kitchens. They will use the new, ambitious international food exhibition as a platform, to raise awareness: People are increasingly interested in organic produce. The Danes buy more organic food for their private kitchens, than any other people in the world do. This also translates into an increased demand for organic food on the menu when eating out. Professionals in the hotel, restaurant and café business can make a difference for the consumers and benefit from the increasing demand for organic food. 

The goal is to collect concrete experience and understand how the Organic Eating Mark can be disseminated to many more cafes, restaurants and hotels. In Denmark the organic purchase keeps inclining year after year, and this trend is gaining serious momentum all over the world. For professionelle kitchens that has an interest in meeting the organic demand, there is a lot of profit to be made.

The partnership behind the innovationzone has developed it specifically for Bite, to showcase how the practical conversion unfolds in reality. In order to do so, they followed three professional kitchens: Restaurant The Balcony, Hotel Comwell and Café Vesterå in their endevaours to obtain the bronze Eating Mark, representing an organic conversion of 30-50%. The bronze Eating Mark is significant, and signals that the eatery has taken the most important step towards organic produce.

11.00 – 18.00 Meet the Organic Food Fighters of 2017
13 new food professionals have been through a wild organic journey. They are Food Fighters and ready to tell you about their experience. On their journey they have debated organic produce and solved organic-cases for 4 large coorporations. Meet the Food Fighters at Danish Agriculture & Food Council and taste the case-products.

Danes are increasingly requesting organic produce when they eat out! Visit the Danish Veterinary and Food Administration and find out how the Organic Eating Mark can bring more value to your business. You can also have a sneak peek at the newly developed website and materials, made specifically for restaurants, cafes and hotels. 


9.00 – 18.00 Get an easy start with the Organic Eating Mark
The Danish Veterinary and Food Administration is present at the organic-zone, ready to help you with advice and concrete examples of how to get started with the Eating Mark. It is free, and not difficult at all! Request a meeting beforehand via e-mail to Maria Dyrby Nielsen at Madni@fvst.dk.

9.00 – 18.00 Denmark is eco-dating - new countrywide campaign. 
Friday the 1st of Semptember the organic eateries are raising the flag and inviting the Danes on eco-date. Visit the Danish Veterinary and Food Administration and find out more about the campaign, materials and learn more about the eco-offers you can invite your date on.

Visit Organic Denmark and learn more about the members in the professional kitchen and how they benefit from their membership in Organic Denmark.  

 

11.00 – 11.45 Is organic produce sharp as a knife in your restaurant? A question of compentences. 
What is your goal with organic produce, and is it fully utilized? Join in on a professional talk about how organic produce can create more value. From stocking up your supplies to serving your customers, all professional groups need to be involved if the organic production, in order for it to create more value and succes in your business. 

 

14.30 – 15.00 The Annual Organic Award 2017
The award is presented by Organic Denmark to hail enthusiats that is walking the extra mile to dessiminate the organic meals.

Eco-trends in HORECA
Kantar Gallup has taken the temperature on the organic situation in the HORECA segment. Even if organic produce is on the rise, there is still a lot of challenges. Organic Denmark invites you to a dialogue about the new trends, in collaboration with a bureau that knows all about the latest knowledge.

Taste and participate in a talk about organic beverages. Is it possible to create an organic conversion of the drinks menu - and how do you know when the quality is acceptable? Join the organic debate at the Copenhagen Hospitality College part of the organic-zone. 

 

14.00 – 14.45 Organic Produce - Do we really have to talk so much about it?
The story behind the commodity and the organic produce needs to reach all the way out to the guest, to obtain the optimal success with ecology on the menu and the wine list. Proper hosting is essential for the great stories the about the production reaches all the way to the guest. 


The organic-zone is for the visitor with a great interest in organic produce. We encourage everyone to experience the 200 m2 large area. Visit Booth 092 and find out for yourself how the future of organic produce can look like.
